egg & avocado toast

I recently discovered that I love avocado.  I was never a fan of it, but recently on a job I was watching everyone eat it right out of the skin and kept hearing them talk about how healthy it is for you.  So, I gave it another taste.  I don’t know what happened, but my tastebuds finally opened up to the rich, buttery taste.  I’m hooked!  While home for the holidays, my mom made a fried egg and toast with a spread of avocado.  It was a perfectly balanced breakfast.  Another option is hard boiled eggs, great for on the go!

Yields: 2 servings

Ingredients:

  • 4 slices of bread
  • 4 eggs
  • 1 avocado
  • 1 tomato, sliced
  • dash of dried basil, optional
  • salt & pepper to taste

How to make:

  • TOAST bread.

  • FRY eggs over medium heat in a small fry pan.  Season eggs with a dash of basil and salt & pepper (to taste).

  • CUT avocado in half.  Using a fork, scrape out the avocado and spread it onto the toast.

  • SLICE the tomato and layer onto the avocado.
  • TOP with fried egg.
